Botswana Butchery Sydney was the first of many projects OLSK were involved in with the renowned New Zealand company Good Group Hospitality. Taking the anchor tenancy in the new hospital precinct at the MLC redevelopment in Martin Place, this prestigious location required our skilled design and construction abilities to translate their New Zealand design aesthetic to the Australian dining landscape.

Spanning three levels, the entry features a long bar pulling the customers into the space off the Martin Place streetscape. The introduction of a new feature stone floor, in a checkerboard pattern at a 45 degree angle, was integral to giving the brand an Australian identity. Tones that take their cues from the Australian landscape, such as colours of wattle and eucalypt, are washed across the walls and feature in some of the soft furnishings, to further enhance the combination of the Australian and New Zealand dining that is on offer.

The middle level houses the large kitchen that is open and visible to the patrons who dine alongside the chefs. You can hear and see all the activity within the dynamic space, and with full operable doors, you can sit above Martin Place in an alfresco environment and soak up the beautiful Sydney weather.

On the top level is one of the largest roof top bars that Sydney has to offer. Capable of hosting over 300 patrons, this rooftop has become the envy of many, not only because of the views of the CBD skyline, but its specially crafted rooftop menu with casual indulgence in mind.
